Find it too difficult? Try AutoGK.

Im currently using Xilisoft.DVD.Ripper.Platinium.4.0.68.209
Served me pretty well to date.

Probably gonna sound Oldschool but I used to use FlaskMPEG and VirtualDub in my encoding days.

Check out AutoMKV...I use it to impress my friends with high quality rips...very easy to use, though not a 1-click kinda thing.

Gordian Knot is still #1 for my purposes. I rip the DVD to HD, do all the size settings in GK, and when I'm finished I start Vdubmod, loads the avs script and manually adjust the bitrates and set it to 2-pass encode. That's how I've always done it anyway.
