Hmm, it sounds odd that a DVD player won't support DTS (don't they put that in all of them already?)...
The easiest way to convert the audio would be to demux the video and audio tracks, reencode the audio to AC3 (or whatever) and remux, but this is not that easy when the DVD has menus and all that. If you're willing to let go of the menus, PM me, and I'll explain in more details. If you still want the DVD, go to the Doom9.org and research (I can't help you because I don't remember lol, haven't dealt with DVD/MPEG2 in over a year I think, god bless HD).

PM sent, and the DVD player does have the DTS option.. thats why im at a loss as to whats wrong

That's what I'm talking about lol! Menus are very difficult to handle (plus they sometimes check for file sizes, and this is a bitch to handle).
Anyway, we'll use DVD Decrypter to demux the streams. Open it, select Tools -> Settings, there select the IFO Mode tab and set the splitting to none. Click Ok.
Now select Mode -> Ifo. Now select the drive where the DVD is at. Choose the Stream Processing tab and select Enable Steam Processing. Select only the video track and the audio track (subtitles will be a bit difficult to remux so we'll leave them). On both, set the mode to Demux.
Click the DVD to HD button and allow it to copy the data.
Now, read this guide to see how to convert the DTS stream to AC3 stream.
For remuxing, we'll use IfoEdit. Open it, select DVD Author -> Author new DVD. Click on the video button and select the video stream. Click the audio button and select the newly encoded AC3 stream. Click OK and let it build the DVD hierarchy. The use your burning software to burn the 2 dirs (VIDEO_TS, AUDIO_TS) on a DVD (I'd use ImgBurn in Build Mode).
