ELITE Multilayer Online.... It would Kick EVE Online out of the water if done right.
Even just a new ELITE would be great if they do not BUG it up.

Syndicate Wars for next-gen in a big GTA like world,
would own all games , nuff said

a World War II Online game with great graphics and good controls (something to be desired in the currect ww2 onine game)
GTA MMO, join or create gang, fight for city blocks. Some can be police aswell to catch them.

An open ended space RPG with multiplayer.
Built from the ground up with modding in mind and the ability to run your own server.
With real time fighting but still having RPG elements to it.

My ideal game was already done.. it was called Fallout.
Ok,ok, it'd be a game with:
- Pure rpg elements and character creation with main aspects of human psychology.
- A detailed huge world never seen in a game, with cities, countries, continents..
- absolute freedom from the begining (morrowind style)
- intense and interesting main story with lots of side quest.
- open ended, and i mean real open ended
- The posibility to choose the point of view any time, first person, third person, isometric view...
- independent real AI for each NPC. NPCs with a life in the game.
- Inteligent sense of humor.
- Adult content, sex, violence (if you choose that way)
- and, why not, pure photo-realistic graphics.
That's all 
To be more viable:
It'd be a Fallout/GTA mixture with the best aspects of each game improved.

For me it is all about novelty in gameplay. We need a new style of game.
The only game on the horizon that appears to be pushing in this direction is SPORE. I shall reserve my judgement but the asynchronous game world looks like a breath of fresh air.

big fuckin (realistic) guns with loads of gore, with ultra realistic physics so the gibs fly around realisticly...and you can use any object as a weapon, so you can throw with heads, hit some one with legs...stuff like that.
with next-gen gfx off course.
