If anyone wants a translation of what the two guys at the side are saying I can make out the phrases 'battered', along with the cantonese for 'ass' and the symbol which roughly means 'handed back to'

It's a style of Kung Fu where you are drunk and stagger about. Seriously recommend you get the film, the main character is an alcoholic old man who is absolutely bastard hard:)

The guy in the video fucking sucked at it though, he wasn't unpredictable at all.. more to the point the random large movements are also meant to help dodge attacks.. judging by the number of times the guy got smashed in the face, I think he missed that lesson.
It kind of looked like he was doing an impression of Jackie Chan, but screwing up when to move.
In the movies, when an opponent goes to kick the drunk, he'd kind of sway away with the guys leg, then back and punch him four or five times, not sway his face into the guys foot.
