A game with complex shooting mechanics will have you swapping between guns based on type of encounter. You should use battle rifles and assault rifles in medium to long range engagements and rely on pistols, shotguns and smgs for CQC. Considering Cyberpunk seems to have more of a Borderlands approach, stats and play style will most likely be the definitive factors in choosing a weapon.
I always found dual wielding firearms totally absurd and stupid. Unless it's in a game that is on purpose absurd, like Serious Sam or even Wolfenstein. But in any other type of game, it's just dumb. And the main reason being, that IF dual wielding was an actual thing, wouldn't it be to shoot at 2 different targets at the same time? In a game, that's just not possible. Maybe in a VR game, but even that sounds very impractical, lol.
Shooting a gun is as easy as point and click, but aiming it sure isn't.
I did use a dual wielding revolvers build in RDO, but eventually went back to using the rifle (Bolt Action Rifle).
I did use for a while dual wielding pistols in Max Payne games, but eventually I found it more comfortable using a SMG or assault rifles.
I can understand the coolness factor of blasting around with 2 guns. But me, personally, I don't need it. I am coolest with a sniper rifle: high risk - high skill - high reward.
Against a larger group of enemies i can definitely see it being a huge advantage, especially for something which can practically be half-cyborg..
Matrix has a crazy amount of dual wielding, so i can understand that people might want something like that in the game to be able to RP something similar. If a game should have dual-wielding it's in games like this, where it actually can make sense.
It's a game, you're overthinking it. Using your own logic, why use an SMG when there are even stronger/bigger/better weapons? If they thought in this silly way, melee wouldn't be an option either.
Surely people here have played Hitman, Red Dead 2, Halo, Goldeneye, Tomb Raider, Max Payne, Counter Strike or the many other games that have featured dual wielding. The benefits in a game are not that hard to figure out.
You use pistols in close quarters combat, shotgun and smg's or melee. You usually do not use assault rifles in close quarters combat. Dual wielding pistols in most games are crap so I see no reason why they would bring that to the game. I just hope they spend more time polishing the melee combat rather then spend time implementing dual wielding pistols. Anyways my point is that its such a small deal that it doesnt matter that you are not able to have dual wielding pistols in this game. It has tons of other features.
For example I wish we could get a controlable aircar/heli/jet but this game has loads of other shit to do so Im not expecting that we can do everything in this game that we can do irl.
Perhaps you can kill twice as fast while it looks cool as fuck. Just a guess though
totally this, it just looks too cool for me also i love devil may cry (ebony and ivory) it's awesome
side char uses it at 1:20
it's just one more small thing that adds to the whole and feeds the cool atmosphere, just like when they made that first teaser full of dream stuff to fuel the imagination, it's made to look awesome for the sake of being awesome.

Coolness is a huge thing for the cyberpunk universe. Neuromancer even mentions shurikens so yeah, totally silly/cool/cheesy (very 80's) but that's what this universe is. Matrix did the cyberpunk lore really well, way better than most games or movies that has tried that thing, it has a lot of cheesy but cool scenes with dual wielding..
Playing Wolfenstein II: The New Colossus right now and dual wielding is cool and very useful. Not that i will miss it or something as majority of shooters doesn't have it and can be very fun, Played DOOM right before and no dual but shooting was awesome.
Bought it for ~25 EUR on GOG via RU VPN. I think that is a good price and seeing as it was the same about a year ago, I doubt it's gonna go much lower before release.

Dialogue in Cyberpunk 2077 is different and can either be peaceful or get ugly depending on the player’s behavior. They can actually look around their surroundings, making their chats with NPCs super immersive and almost realistic. It also gives them a hint of what is going on around them.
For you see, when attempting to negotiate with potential muggers for instance, there might be movements from other characters surrounding you or your part. V, the protagonist, can actually glance around his or her sides to check on any hint that the situation might get bloody. Players can check if there is a suspicious car boot or glance at the guy behind the one they are talking to, seemingly slowly taking out something behind his back.
These signs that players can catch early on could help them evade deadly gunfire if things go south. Or they can use this to their advantage to make the negotiations go into their favor. Or just wipe the opposing side out to ensure their own safety. The choice is theirs to make.
