I saw a short clip of some trooper(?) who said something for the emperor and it was quite brutal and looked super fun. I have never read or looked up WH40K stuff. What am I missing out on?
"Start" is also a hard term to define. Do you want to table top? Do you want to learn about the lore? Do you want to read books?
I guess the various Wikis will give you a high level overview of the general idea of the universe. You can then dive into races and historic events, geopolitics, inter-empire politics, etc.

Started a few months back on the books, for good or bad, with the horus heresy series, since that seemed to be the or near chronological beginning.
Pretty cool so far (book 32 (?), deathfire but I skipped every single anthology book) but most of the stuff not involving the legionaries/primarchs is really REALLY boring. I wanna see how the post humans/demi gods fail, dammit!

Started to read a bit of the lore, i.e. Horus Heresy. Which is basically "30k". It's where most of the detailed lore takes place. And there is also a lot of "origin" stories about the Necrotyr, Dark Eldars, the Ancients whatever, the emperor and his weird origins etc.
Very over the top, very entertaining. I highly suggest the Audiobooks. The voices add another layer of awesomesauce
Or another great source would be youtube, there is a guy who made pretty much all the lore into "long" clips
