From what I've played (demo + 2 work days) you just mix drinks, nothing more (other than checking the news or your favorite *chan imageboard before going to work etc but that's only 2% of the gameplay).
Some drinks just have to be what the customer ordered, some you have to improvise based on their personality, physical appearance and so on. A big guy should probably get a double drink. Someone that's not used on drinking should probably have only the minimum amount of alcohol in their drink or they'll leave earlier than planned..
The more you satisfy them the more they'll talk and you'll get a deeper understanding of the world.
Meanwhile a mysterious super hacker named Alice_Rabbit might or might not have something to do with you.
It's a visual novel but instead of selecting between dialog options you select what drinks to serve. And your choices will unfold the story in different ways. (How different I don't know). Seems pretty good.
