But you have to feed the screens data, and to power them. Wouldn't that make an ugly mess?

You can somewhat hide it (different solutions for that) but yeah you have cords going either to the ceiling or floor which will be tedious. Otherwise you need to go way more advanced and building a back panel or maybe go with tablets for a wireless solution.
That being said... been about 10 years since I build 'étalages' / Promotional displays so maybe someone else has more current/better/simpler solutions to it.
I'm assuming you are working with those panels because they are available? Otherwise I would have gone with one or two bigger displays and them having more items on them.

A single PC to run multiple screens. Each display will have to show a fixed text on one side, and shuffle through images on the other.

Get a few borderless monitors. Attach them together on a stand. Clean wire set up.
Make it look like a billboard and have the photographs / images move slightly.
You need to make it not look like a bunch of screens put together.
Look into those moving posters they use at bus stops. They should be affordable.
Design a bulletin board type window display.

Nicest way (if you got the cash) is to use mirrored display using a video inverter (to create a backwrds image) and reflect it to a mirror between two standard thin-border screens. If you place the mirror correctly, you get a seamless triple display.
