normaly it should stay at the language that u saved before reboot.
so it's a bug or it's the fault of ur installed rom.
if u can u should search for a nordic countries stock rom for your tablet and flash it over because it seems like u got something chinese installed.
do a factory reset and see if it's still happening.

What makes it a wee bit harder to find any other roms for it I think, not sure how well it would work flashing a rom from some other device but..
well if it's some sort of cheap no name tablet you will find no custom rom for sure.
but u need a stock rom anyway...

well if there is really nothing like model number or so then i can't help you.
if u flash a rom which isn't made for your tablet it will not work.
only thing u can do, if u haven't yet, try a complete factory reset and see if it will help.
do a backup before u do a factory reset.
