To answer the question, what IamAwesome said. Play them all! They're that good
Dark Forces I/II and Jedi Outcast/Academy are badass action games with old-school shooting, and epic lightsaber battles. The former two haven't aged very well in terms of visual candy, but the fun factor is still intact if you don't mind the graphics.
KOTOR I and II on the other hand are completely different games, pure RPGs with tons of dialogues, awesome story and plenty of interesting characters and locations. There's enough gaming material to keep you busy until mid 2014.

SWTOR was the first mmo -game I've played. For some reason I never got excited about World Of Warcraft. And the few months that I played the game I really liked it. Played it again last spring and I liked it still. Probably play it again in the future. I never expected that I would be playing the game for many months.
Still I would rather take a new, single player only, Kotor.
