Wasn't that information started to appear from Brotherhood? I think that technology is used to train templars in Brotherhood and the next titles, that was part of multiplayer's backstory.
The so called Animi Training Program.
Edit: In the facebook game AC: Project Legacy, you relive genetic memories of others individuals trough a machine similar to an Animus, allowing a person to relive the memory of someone who was not their ancestor. These memories are implied to be "harvested".
