VRAM/resolution consumption is most likely not influenced textures alone but I got that idea from some site that tested the original back in 2007 and reported that the higher the res, the more VRAM it would eat up.

My rig definitely can't handle Very High. The third level drops the FPS into the teens. I'm running an Intel Core i7 920 2.8 GHZ, but I'm afraid of overclocking it without proper power supply and cooling.

It's both
Higher resolution needs more VRAM because each frame is bigger, "higher" textures needs more because the texture resolution goes up.
Theory for a simple image:
1280x720 @ 32bpp = 1280 * 720 * 32 / 8 / 1024 = 3600 KB required per frame (and that's just the frame itself)
1920x1080 @ 32bpp = 1920 * 1080 * 32 / 8 / 1024 = 8100 KB required per frame
That's just the rendered frame itself, not counting in memory used to actually render it all or apply AA. Obviously the data required for rendering and textures eat up most of the VRAM along. And then there's a little more used for applying filters, which often need to make a copy of a frame etc.

So, I'm seeing some weird stuff with this game with my GTX 580... When I start a play session, the game runs at about 30-35 FPS on Very High. Then after about 30 minutes of gameplay, I notice that the framerates begin slowing down, to the point where it might go into the teens depending on the scene. Turning object detail, shadows and post-processing down to High seems to bring my FPS to playable levels, but that is kinda weird. Temperatures maybe? Or I'm running out of VRAM?
EDIT: Just to be clearer, sometimes I run the same scene, for example, beginning of the second mission up to when it slows down (around the part after I blow up the big turret), and then turning the game off and loading it at the save right where I stopped. Framerates go up, in the exact same scene.

Your problem is your computer not being able to handle Very High settings. Simple
As for your edit, honestly, check your temperatures. That sounds like what was happening on my old HD 5770 in a LOT of games. Turns out it would gradually creep up to 105C ( ) and my FPS in games would drop also gradually drop down and down. Fixed it by reapplying the thermal paste on the GPU, dropped my temps down to about 70-75C.
Also, if your 580 is a 2GB card, I doubt you're running out of VRAM as the game really only takes up around 1.2-1.3GB (at least with very high textures & high graphics settings.)

It does go up to 90C when playing. Never goes too much beyond that, 95 at most, but still that's pretty high. The problem is I don't really have the know-how to open up the extremely expensive card (I live in Brazil, BTW) and risk ruining it by doing something wrong.

Yeah, I had the same thoughts when I opened up my card as well (sweating all over while doing it lolol). It was really simple on my card though, unscrew 4 screws, unplug the fan and then bam, reapply the thermal paste and plug/screw everything back into place.
But if you have MSI Afterburner, you could try putting your fan speed on 100% just to test and see if it takes temps down and doesn't drop your FPS.
Otherwise if you're still under warranty you could try calling up/emailing your 580's manufacturer and see if they could replace it due to overheating.

While playing i'm getting jumps in fps and my card gets so hot crysis quits giving me an error and ive never had this problem in any game before.

Do you have 2 monitors running ? because theres a bug where GTX cards go to full load always when on 2 monitors, I use nvidia inspector to check the Multi Display Power Saver thingy fix the temp right away and doesnt make my GTX580 run in full mode when idle or just browsing on the net and shit.

No, I only have one monitor. Might be a case of doing a good cleanup, it's been over two years since I cleaned it up. Maybe even the CPU is heating a little too much. Maybe installing a cooler to the side of the case to blow out hot air will help as well.

Not sure why this title is garnering so much praise. It's using the same exploitable move-n-cloak system the others used, and the same completely all-or-nothing spot system in which enemies from 10km out instantly know your location without a shadow of a doubt should one pixel of your body protrude from cover.
Is it an excellent tech-demo with pretty eye-candy? Yep.
Is it anything more than that? Nope. Not even remotely.

well, with vsync, if it cant keep (your screens refresh rate), then it will render half the frames in order to stay "sync" with the screen (1:1, 1:2, etc)

I used d3d overrider and it pretty much fixed the 30/60 jumps.
I though d3d would not support dx11 games...but it sure did...
