Can you get by with just using english for most of those jobs?

Yes, but the sad thing is that even tho scandinavians are good in english, we really hate to speak it when we don't have to. That is why its way easier for swedes than polish/lithuanian people to get work in Norway. 90% of Swedes understand Norwegian well enough to communicate. Denmark is a whole other story, but then again they are not in need of a job outside their own country 
Anyway, I know this sounds really stupid, but I feel kinda annoyed when I have to speak english in a Norwegian pizza restaurant :/ Its probably because its very rare we have to.
The reason for my quote was actually because of a radio interview I listened to some months back. It was a bout a Spanish guy trying his luck in Norway. He had been here in vacations lots of time and really loved Norway, so when the "european crisis" came his first choice was to get a job in Norway. But when he tried to get a job here he saw this whole country from a different side. Everything was so great when he was here on vacation, and the people where so friendly and so on... but when he came here to work it was a whole other story. Not that people where rude, but that getting a job without talking Norwegian was next to impossible. And he was not the picky type either... he sent out CVs and called lots of places, no reply, no nothing.
