dungeon defenders (not sure about player cap though, might be just 4)
diablo 2 (with a mod that keeps things fresh)
company of heroes (awesome in 4v4)
star wars battlefront 2 (THE lan game)
flatout 2 (i think it allows 8)
warcraft 3 (one of the many many custom maps, some tower defense or dota or a dotaclone)

Swat 4 is quite fun on lan, 4 players maximum on coop tho 
Ghost recon (the first three)? Rainbow six raven shield?
Maybe some HL2 mods, like "The hidden" that one should be super fun in a lan
Gears of war is also quite fun 4v4
Flatout 2 (as mentioned above, demolition derby is awesome!)
can't think about anything more at the moment, will post some more ideas if they come back to me 
Edit: we had a lot of fun with Live For speed in the last LAN party, might give it a try if you like racing games

That's a list from one of my lan game folders. I have 8-10 players often and I have another folder but can't access it just yet.
All crackable so anyone can play, I'm not a big cod fan but others enjoy it and it does work well on a lan so if you are interest you just jook up teknogods to know how to play it.
Left 4 dead survivors vs infected is also great 8 player action, plus your standard c&c titles.

Men of war is actually a great game. The 4 player co op missions for the Vietnam expansion are really good. Remind me of a co op Commandos.
