I would like to root my phone. Risks? Apps to use? Changes? Guarantee void? Will I be able to go back and un-root the phone?

There seems to be so much shit involved, I just want to be sure that I do the right steps, especially regarding future updates and so on Smile

You want only to root, or get a custom rom with it?
If you want a custom rom too, i highly recommend the german version of MIUI:

Looks very sexy, not like all those roms, where only the color is changed and it still looks like stock android.

Ok I managed to root it and flashed the original kernel back on (still have root rights) but the market does not find any apps anymore and I can't install because it says that my device is not supported.. the fuck?!

Just searched for a good tutorial (http://www.android-hilfe.de/anleitungen-fuer-samsung-galaxy-s2/117451-root-anleitung-fuer-galaxy-s2.html)
Because of the market, sorry i dont know.
Have you installed CWN (Clockworkmod) too? If yes just boot into it (turn phone off and keep holding Volume up, Home and Power button pressed). Then you just factory reset your phone and delete the dalvik cache and system partitions. Just make sure you makea backup if you have anything important installed.
If it still wont work, just try to install a custom rom. You can afterwards still go back to stock rom if you want.
