More tips:
Don't sell materials right away, and you don't ever need to sell collectibles as Gvaz said. Use google docs spreadsheet(not quite complete but mostly good enough for this purpose) to find out who can trade for say, spicy cabbage as an example, which will give 3 heart affinity with Reyn, and trade as much as you can. You can easily get level 3 or 4 affinity with each character just by gifting.
Before opening silver and gold chests, save(or use savestate with Dolphin). These chests contents are all random so if you don't like/need what you get, reload.
Don't buy armor/weapons, save your money and buy up all the skill books from the vendors instead. The best slotted weapons and armor are in chests anyway. By early to mid game you will need most of your money to buy skill books, and if you undertake the huge sidequest of rebuilding a certain area.
When enemies(mostly bosses and uniques) 'charge' up their finishing moves, pay attention to the colour of the talent they are about to use:
a) White moves are Talent Arts which can be nullified by Monado shield
b) Red moves are Physical Arts which can be mitigated by Monada speed on the character about to be hit
c) Blue moves are Ether Arts which can only be mitigated by high ether defense
Given the above ether defense is more important than physical defense.
Killing enemies over 20 levels is past the point of diminishing returns as far exp, sp, and ap. They are still good if you need to farm gems and equipment. 10-15 levels higher, I think, nets you the best bang for exp, sp and ap.
If you can't find a unique enemy(will happen a lot) and you have the right conditions(ie, night, thunderstorm, etc.), save the game and keep reloading until the enemy appears. This also helps when farming.
Ether deposits will only respawn after about 5-10 minutes real time. So save/reload won't work here.
Most importantly the game can be overwhelming, what with hundreds of sidequests, skill linking, gem crafting, affinities, etc. Take a deep breath and note that these are all optional, and not at all required to finish the main story. You can always go back to them later on when you have more time.

Also you absolutely can hit higher level mobs if you spec/gem right.
The highest level boss in the game is 120 when the max level is 99.
I cheated a bit and specced lvl 6 gems and skill links and all that jazzz and was able to hit him at 93 or 95 but i couldn't mitigate the damage and it was a swifffest so i gave up lol.

I was playing the game, doing my thing enjoying it, all is fine. Out of nowhere without any warning the gamepad (Xbox360 wireless) goes completely mental. I have no idea whether it's the game or Dolphin, but the gamepad itself is fine. All of a sudden RB does not work and the analog sticks are weirdo. If I go right with the left analog stick, the character runs in left circles. If I go left or right with the right analog stick, it either goes left or right, there's no pattern. I have no idea WTF is happening, I'm clueless. Is this some weird Dolphin thing or am I the unluckiest guy in the world?

Sorry, I don't know. I've had the Wiimote timeout after being idle for a bit, so I just Alt-F5 to reconnect. Maybe try Alt-F5 twice to disconnect an reconnect?
P.S. I'm using Lectrocode build 3.0 r7617, and not the newer GIT builds. The game/Dolphin never crashed on me once. Only other somewhat annoying thing is after about 5+ hours, I get this 'static' sound and have to reboot the game(using DSP LLE settings, not sure about HLE).

I think it was trolling me or something, it works fine today.
I do have crashes, usually while saving.

Rushing through the main story to get all characters didn't really work well for me since you'll get to a point where enemies will be at a higher level than the player, which makes the fights frustratingly long. I also think that the first party you get (Shulk, Reyn and Sharla) is a very balanced one, so I do not feel the need to use the other ones.
The number one flaw in jRPGs is the ridiculous and "trying too hard to be philosophical" story imo, but this game has neither one of those. Story is actually very interesting, VA must be complimented.

Its damage output is low, but it can absorb a LOT of damage, good for long fights.

Dunno, I find the VA so-so, switched to Jap after couple of hours.
And the story is predictable, although it has some twists.

Like all good RPGs there is no 'best' party. Properly gemmed/skill linked you get:
Shulk/Reyn/Sharla - best defense...you'll rarely, if ever, die. But even random encounters 'at level' will be slow.
Dunban(or7th)/5th/6th - best combination of physical and ether attacks, with decent healing.
5th/6th/7th - Best dps against elementals(or enemies with super high physical defense).
Shulk/Dunban/7th - Absolutely the best DPS team with or without abusing topple mechanic against anything but the elementals, which just happens to be 99% of the story bosses and optional bosses.
...and on and on.
Spot healing becomes unnecessary later on when you have skills that, for instance heals when you do a critical, or whole party heals after chain attack or during burst affinity, etc.
If you plan on doing a good deal of the optional stuff, go with the party your comfortable with for the story events and such, but try them all out to: a) increase affinity between them, b) get a feel for them. You just might have a new favorite(s) party, just as I did several times when progressing through the story.
TLDR;
If you have a good grasp of the game mechanics(and how important tension and agility stat is) you can beat the last story boss with with a low 70's party. If you just advance the story and occasionally pickup a sidequests here and there, you'll most likely be in the high 70's or low 80's and you will spank the final boss with...any party.

Sharla's healing seems impossible to drop right now. Shulk's healing ability is too poor. I'll try switching Dunban with Reyn. Reyn with third rank gems is an absolute tank though.

Yeah Sharla is boss early on, you can get Heatsink gem, can't remember if it was from quest or I crafted it, pretty early and stick it on her weapon so she doesn't overheat as much. Dunban surpasses Reyn as 'tank' very early on. Reyn doesn't really catch up until much later when he is fully skilled and even then he needs Aggro Up gems to hold aggro.
7th will beat both Dunban and Reyn tanking and DPSing at the same time simply because s/he has the highest naked strength, close second best agility, armor that weighs next to nothing and Arts on steroids.

If you want to go that route, yes, but only after you've maxed his Wisdom tree. He gets a skill called Inner Peace which will up his Agility by 30% while naked, which makes his already awesome evasion OP. He'll pretty well evade almost all physical attacks, so the only thing to mitigate is ether attacks which can't be evaded.
I just ended up equipping him the lightest armor with the highest ether defense for most of the game. At the end I even equipped heavy armor on him and he was still my best evader.

Aye +1.
It's the reason I did not make use of that skill with Dunban, nor did I link it to other party members which could benefit from it. The only place it may make some sense(along with the bikini/swimming trunks type armor) is probably the area with rainforest like climate. Anywhere else it was silly, especially the region with arctic like weather.
