Alpha Protocol
This is the new Splinter Cell Game (hopefully series)
It's all good with this one if you start out with the right settings.
Pick the spy character, buy a pistol silencer, the digital camouflage and subsonic ammo for the rifle ASAP and max out in stealth, pistol & martial arts. Use the radio mimic gadget if you have a hard time avoiding the alarms.
I first started out with the Recruit character and it was a totally different ballgame.
AI might be a bit blind or x-ray visioned sometimes but it's a the best stealth game out there atm.
I wasn't used to this style of gameplay anymore, planning routes to take out enemy (splinter cell style)
This is a highly underrated game!

I think you have named all the good ones.By far these are some of the most entertaining games for me.Its fun and a challenge to try to use other means to win then gun and run.Its a shame we don't have more titles like this.I love the thief and hitman series.Blood money was excellent.Don't forget Death to Spies which uses a lot of hitman tricks.

Definitely not a good example of a stealth game, exactly because of something you mention as well: the AI.
There are parts in the game where you're spotted regardless of whether you've activated your stealth ability or are behind cover or whatever. And then at other points they don't see you because you're taking cover behind some half broken down well, even though your head is sticking out - but standing too close to the corner of a wall, without even peeking around it does trigger the AI again.
Alpha Protocol fails miserably in that department, really does. Crysis is more consistent with stealth than that game >_<

Stealth "Done Right"? I'd almost have to go with Assassins Creed on this one, unless it's normal to be translucent when you hide.

i also greatly enjoyed stealth in bf2 ^^. I was the ultimate sneaker lol. I mean as sniper, crawling inbetween enemies, in the shadow, along side them, right under them etc. I was able to do some really hilarious stuff lol.
