In the commentary tracks they always say that only few episodes are planned ahead and even those are usually just raw ideas and the actual writing process still happens in the last week.

I liked the last episode, all those nods to the older cartoons. The shut up mimsy (and that whole relationship) was the cherry on top. Just like a typical bad guy and his stupid henchman in all those cartoons i used to watch when i was a kid.
