you could just boot with knoppix or something and partition the target machine similiarly and copy the files over scp or netcat and then run grub to write the boot block
oh, and check that boot.ini and fstab match the target HD
linux is not as big of an ass with the way files are as windows
as long as the permissions are preserved, grub installed and mount points defined properly it should work directly
