Startopia is something different, but also vaguely similar (which might have something to do with them being ex-bullfrog). A very good game, so definitely give it a look in if you haven't already.
Obviously the games Epsilon already mentioned, Rollercoaster Tycoon in particular... maybe Sim City 4 or something as well.

What about the Worms games?
Epsilon: Game is great btw, I love it, so far it's a definite goty. It's remarkable how much has changed since the beta, stardock have been working their asses off, and it shows.

Well I did play Startropia a long time ago and yes that game was lots of fun as well. But looking trough the replies here I take it there really isn't any "newer" version of theme park? I can't help but finding it somewhat weird considering all the other tycoon kind of games been released the last few years.

I'm sure there have been some cheap knock-offs that have attempted it, but Rollercoaster Tycoon 3 is about as definitive as you'll get - it has the graphics, the depth, the fun, create your own rides and then ride them... and well... practically everything really. Some diehards prefer Rollercoaster Tycoon 2, but if you want a modern Theme Park you won't get anything better than RT3 unless something else slipped by unnoticed... I think it would be hard to top the Rollercoaster Tycoon series.
