Ya, I have the same issue. I'm thinking I'll wait for a patch when the game finally comes out. I've updated my ati radeon 5870 drivers to 9.1 still the same problem as u all. Hope this gets figured out.

fix for ATI vcard users. This works with my 2 rigs, one with 4870, other one has HD 5970 with win 7 64bit OS on both. This fixes the freeze in menus but slows game FPS.
1. Rename Saboteur.exe to UT3.exe and run it to play
2. While in game, alt-tab then ctrl-alt-delete to show task manager
3. Find UT3.exe in process tab, right click it, click set affinity, uncheck all processors, check only CPU 3 (for quad core) or CPU 1 (for core 2 duos). Press ok, minimize the task manager.
4. Go back to the game and the problem is fixed!"

Setting the affinity to one core does help a bit, but it still freezes after a couple of minutes. HD4850 btw.

I tried renaming the saboteur.exe to UT3.exe and I turned my Catalyst AI to full and it helped a little bit but would still freeze after a few minutes. Hopefully there will be a patch from ea or a hot fix from ati for this when the game is released.

I really hope this is fixed soon. Failing that I'll just get it for the 360 when I get mine back in a few weeks.
