try just doing low heavy kick on him repeatedly.
BTW, anyone considering getting fightstick SE dont, get the TE. I just bought mine SE a couple days ago and today one of the buttons isnt working anymore and now I cant play sf4 for like weeks until it gets back from RMA. Pissed as fuck.

Unninstalled it already. After playing the Tekken series for the last years, SF4 feels like a step back to me. Not because of the graphics, but because I'm much more used to that Tekken gameplay, you know?
Plus, each character there has a ton of moves when compared with those from Street Fighter...

Hah, I was going to say the same thing, Tekken 5 (4+ years ago?) was a much better game. Tons of characters, tons of moves, whereas here every character seems to have his personal rehash of the same 2 classic moves - shoryuken and that hurricane kick (sakura? really?)

you're missing the point.
even in a game like tekken nearly everything is also a rehash of each other's moves.. an uppercut for launching an opponent into the air for instance may look different with a different animation but the frames/properties are the exact same as at least 10 other characters.
the difference between tekken and SF is the limitation in SF and lack thereof in tekken... each character needs to be balanced towards the whole of the game and because of tekken's sheer amount of options it'll never ever be as balanced as SF with its limited amount of characters and moves which makes each and everyone of them useful in one situation or another and ensuring one character never strays too far away from being either broken(stupidly overpowered) or completely useless in the game.
in tekken an average of around 50% of all moves for any character are dismissed completely because they're in practicality useless in high level play. the same goes for a good bunch of characters.
with fighting games "more" is almost by fact not even close to being better.

Seth is so cheap, even on the easiest setting. When playing on beginner, I expect to steamroll everything (I need pratice, I suck major balls at fighting games), but Seth, damn, he keeps blocking my every move, slaps me around. And when I pull out my special in desperation, he reponds with his own and destroys me.
Geesh...
I'll try the low heavy kick strategy... I can't even imagine how tough he must be on the higher difficulties.

lol Tekken has tons of moves that you don't bother with because in actual competitive matches, they're useless. So you're down to a select few, like around 7-10 moves depending on the character. And your best 2 or 3 combos. lol

To all the scrubs who don't know how to play.
There's an incredibly useful tool called Challenge/Trial mode that will teach you essential moves and combos for each character.
Try these out and also watch them executed perfectly on YouTube.
