Are there any difference in quality between different brands when it comes to CAT6 network cables? If so which is better?

well, they all have to conform to the cat6 standard, so they should all be capable

Does it matter if it's cross-over or patch? It's to connect my to a NAS.

crossover is for connecting 2 PCs, if you want to connect your computer to something else, you need a patch cable

buy the cheapest one, if you want to use gbit ethernet go with cat6 (even though i've gotten it to work with other cables it's stupid to gamble if your buying a new cable anyway). As they say buy the cheapest cat6 cable. If cat6 is unavailable cat5e should work but if you can get cat6 go with that.

It's all the same really, the isolation is not something normal people has to worry about (there are extra isolated cables). Depending on where you live i'm sure there is a chain or something that sells stuff for cheap prices (alternatively go online and order it).

Would it make a difference if I attached a cat6 patch cable between my modem and my router or is that not advisable?

unless your modem connects you to some big fat fibre...no, not at all. that's about the last place i would worry about cable speed or quality (when using the usual dsl modem + small (wlan) router combo for home use)
