32GB of RAM for gaming is pretty much waste of money. Swapt that Plextor SSD for Samsung EVO 960 and you are pretty much good to go.

I use a very similar solution, with a NAS for movies/music/pictures/documents and a 512GB SSD. But I find myself needing to clean up space more often than I'd like. There are always those games I install and dont finish but dont want to delete either. You need to have some sort of hygiene, which can be a hassle imo.

I just want to make you look bad based on poor workstation configuration decisions.
Now, I don't know what hardware costs in Poland, I guess it's cheaper because everything is stolen from Germany and resold, and I don't know the exact budget for your configuration,
BUT... for the fun of it here is what I would have chosen as workstation PC (by only estimating your PC's price, including Monitor)...

That PSU doesn't make much sense especially on a X99 platfrom. Pick Seasonic Titanium or EVGA G3 with about 550-750W.

you dont need it, not even close. if you buy a smaller psu, but a good one it works more efficient which means less power consumption.
about the m2 ssd, make sure that very model is bootable and that the board supports booting m2 devices.
rest is already said, get a custom 1080 card. the strix is ok, or a palit jetstream. maybe just add a 1tb normal harddrive just to be sure to have space for stuff
and buy a decent air cooler, that aio watercooling stuff sucks and isnt more silent or effective for cooling
