I've never had a laptop this big before, but it won't be leaving the house so portability/weight isn't really that big of a deal
Does anyone know of something better for the size and price? It will probably be around $2200 or thereabouts.
I know Clevo/Sager etc are cheaper, but they're usually very bulky (they remind me of Alienware laptops) and look like shit. They look like they have to be that big for *potential* configurations rather than the config you end up with, a sort of 'one size fits all', eg: one that houses SLI 980m GPUs looks as big as one that houses a single 860M.
I'd also like one without VGA output or any other redundant thing (such as an optical drive).
And does the 970m (or any 9xxm card) have the same VRAM issues as the desktop 970?
On a serious note: Sorry can't help, only times I was into laptops (as in knowledgeable) was when I fixed them and when I needed them for work but that's a decade ago.

But yeah I can why other options aren't viable, especially if it needs to run Arma 3 as well
How is Gigabyte with their finishing materials these days? They were always rather cheap on it and the picture of the one you showed doesn't really look like they changed on that front.
The problem with these is the immense heat they produce, especially at that tiny form factor. This creates a lot of noise, heat around the laptop and throttling, the cancer of laptop gaming.
All laptop heat, depending on load, and games are usually a heavy load, but here the difference is you have two major sources of heat - CPU and GPU - while non-gaming laptops only have one. Comparing to PS4, the PS4 has much larger headroom, which allows for heat to dissipate much more easily with larger fans, which happen to be more silent because they can spin slower and such more air. I suggest going to a friend with such a so-called gaming laptop and trying a game for ~15 minutes to see the noise levels. If you are comfortable with a vacuum cleaner level noise while gaming, cool.
I think a 960/970 GTX in a mini ITX case with a carrying handle for moving it would be a better choice than this laptop.
About resale value, I agree completely, but you should consider if you are buying this machine for several years of your use (possible upgrades included), or for ~1 year use, sale and buying another. Both are valid strategies. Personally I prefer something I can upgrade over they years.
About micro ATX/mini ITX, there are many guides out there, I am sure we can find a presentable case with proper PC components.
You would still need to plug the power cord of the laptop, it's the same thing. You wouldn't play on the laptop's battery, as it would run out in about ~30-60 minutes, unless you throttle (cancer, etc.). One cable isn't really a problem. For the rest, just use wireless; the dongle travels with the PC, or if BT, there is not even a dongle. The wireless gamepads are also great here.
