If you don't have many moves yet, just counter when they attack you. Grab people and use environment kills to take them out quick. Just watch out for the grapplers. They can be real fuckers, especially when there are two or more of them. You can't grapple them and they mostly use special grapples that can only be countered using QTEs. One way to handle them is to grab a tire iron from the boot/trunk of a car and bash the fuck out them quickly.
As soon as you can, focus on collecting the jade statues. They'll unlock additional moves. By dating the various girls you get rewarded with map icons for the various collectables. Once you can see the jade statues on the map, you can grab the majority of them in one hit (a few are only accessible on missions though).
