5.0.1 ... but Apple stopped signing 5.0.1 the other day, so you can't install it any more. Only 5.1, which is the latest, can be installed but not Jailbroken. I'm not sure if the Cydia/HOSTS method allows you to install 5.0.1 though.

Dayum, I'm a bit out of it by the looks of things. A tethered 5.1 JB is out, but as they say; you'll need to have it tethered to your PC and set for "Just Boot" via redsn0w each time you reboot or power cycle the iPad. There used to be a method for installing existing FW despite Apple no longer signing them, it involved Cydia and the HOSTS file, but for the life of me I can't remember exactly what it was-- or even if it still works these days.
