I've started understanding the file a bit better so some of my comments were a bit inaccurate, SSAO and Soft-Shadows are both enabled at the high and ultra preset for example.

Adding stuff to the user file just resets it but editing the default file works so I've been adding and adjusting various values there.
So what I've changed so far is simply this, not much:
LogFilterLevel="none"
(Redundant I guess but might as well disable this, nice to see test mode enabled by default too, I doubt it's active in the beta however.)

(Here I set default resolution and full-screen but again it's probably redundant as it auto-detects native resolution and starts in full-screen mode at the first run.)

(I did not change this but it's probably very useful for those using different aspect ratio or multi-monitor setups unless the game accounts for this already. )
MSAA="2"
(This was disabled / 0, either for performance or compatibility reasons, Post/Edge-AA is used instead but I'm hoping both will work together.)
<Shadows
(Changed default preset from High to Ultra here, probably redundant again but there's also room for fine tuning the settings individually here, disabling SSAO or soft-shadows on certain presets or enabling them on others to name something simple, draw distance and shadow resolution can be adjusted too.)
<Terrain
(Same as with shadows but also set reflection quality from low to high - maybe ultra? - and occlusion quality back from it's low-detail value of simple "occlusion" to ultra.)
RetroQuestMessageSystem="false"
(I didn't change it but apparently it's very popular to set this to true to use a more classic quest and message log system, was popular in Risen 1 too.)
There's still a lot of other values of course, individual draw distances of objects, a number of resolution values to adjust like for shadow or such, LOD distance and a number of others, will see what I can do with those.
