I've been using vlc streamer on the ipad and found it to be a pretty good app, its actually i think the one app i most use on the thing.
im thinking about buying it, to get rid of the adverts but also the full version lets you copy movies across to the ipad so you can play them without needing to stream
anyone here use/bought it? recommend it? or is there something much better that would be a better option?

I own both AirVideo and Plex, and both are excellent in what they do, but ultimately, with the last update of AirVideo you can passthrough h264 video, is the winner so far. AirVideo allows you to encode streamable videos to an iPad friendly format so you can transfer them to the device no problem. If I want to take an original file, I just use XenonMKV to remux and reencode audio only.
Plex is a streamer only, but is more of a Media Center type of App. The server software running on the PC downloads metadata and artwork for TV episodes and films, and you get that in a pretty UI on the iOS.

I use Twonky because it was the first hit on google. Works without problems.

are those options all automated solutions that i dont have to do any prep or manual work myself? vlc i just load it up on the ipad, view the movies on my hdd, select what i want, and can immediately start watching it while the program re-rencodes and automatically streams it with the option of copying the movie across to the pad as well.
ill look into those.

Yes, both are automatic, in the sense that it encodes on the PC automatically and streams ready stream.
In both you have to configure the folders you want to be accessible. Plex is a little more complex as it requires proper setting of type of folder (movie, tv, music, etc).

ok i tried out air video and i like it, its pretty easy to set up and use, but i have 2 questions.
the live conversion option... does that store the video purely in pc memory until i press stop? what happens if i dont shut down the program and shut off the ipad, is the converted file still using up memory? really not sure exactly how that option works.
also, i cant seem to find a way to copy the pre-converted movies straight to the ipad. is that feature disabled in the demo? i see an add to itunes button, but that doesnt seem to do anything. do i actually NEED itunes on my computer to copy the movie across? I would have thought the server-side program would be capable of doing the transfer by itself...

My wife is in turkey and left with her ipad 2. I'd like her to be able to access videos on my computer and watch them. What would be the easiest way? I don't mind converting stuff for her but which player does she need? The ipad is jailbroken.
Oh very important: The videos will have subtitles, either as external srt or embedded. Can't I just put them on a local apache and then let her use a software to play em?

Both Plex and AirVideo support subtitles.

Live conversion is done on request only, as you play. When you stop, it is discarded. There is some caching, but nothing serious. When you turn the screen off, your iPad loses connection as the app goes to background anyway.
Sadly, add to iTunes doesn't work for me either. But you can take converted files with any tool you wish (like CopyTrans and so on).

You could set up a uPnP server, using XBMC for example, and let her stream.
I have a Linksys E4200 with built-in Twonky for example. I got an external HDD hooked up to it and can strem from the router itself wherever I wish. External subs won't work though, since the Twonky version used is pretty old. Since Linksys support sucks donkey balls as I have experienced, htey don't update their shit properly (you can't either since the whole Twonky side of the router is locked up). XBMC on a server (if you have one) should work however, many people I know use it (mainly for internal networks though).

Hmm so far I just copied an mkv (1024x432 h264) onto my apache webserver and opened up the port. My phone (Galaxy S2) can play the stream just fine and it even includes the subtitles MX Player ftw
So which player for ipad supports network streaming over http and subtitles
