Can someone link me a tutorial which explains how to encode only audio of MKV/AVI which is currently AC3/DTS to AAC i dont want to extract audio and then muxup with video looking for a time saving solution.

Use XenonMKV. It does exactly that.

Since AVI are relatively small (700MB - 2.7GB), I would recommend remuxing quickly to MKV with MKVToolnix, and then using Xenon.
