Well, after playing Sniper: Ghost warrior and being disappointed by the unpolished stealth gameplay, I'm trying to remember other stealth games that did it right.
The only ones I can come with, are:
The Splinter Cell 1-4 (Not Conviction!)
The Thief series 1-3
Deus Ex 1 (Can't remember if DX2 was well designed as it was Imho somewhat boring)
So, can you guys recommend other stealth games that worked?

I can only name the Thief series. Only those games gave me the satisfaction when playing stealth.

While the Hitman series were enjoyable, they weren't great in stealth because the AI was extremely forgiving and/or stupid.

Well replaying Deus Ex right now and the stealth is not so well done. Well yes, it is nice to win a mission by not relying on force too much, but the guards were 5 steps away from you and wouldn't see you
A game that did this right -> Commandos

PoP 3 had some great stealth and platforming...not a pure stealth game tho..

There hasn't been a first person game that does it really well yet to be honest. Even Splinter Cell is silly, because as long as you're in the shadows they don't spot you, even though you've got a fucking massive green-lit pair of goggles on your face
Commandos does it pretty well, but that's not first person

But I'm interested in Stealth games regardless of their perspective.
I know what mean about the SC games, but I still think they work well, because they have a stealth system that they player can count on.
Imho, the worst thing that can happen in stealth games aside from bugs, is when the system is unreliable, that is a game killer for me because, why would I spend hours on making the perfect stealth run just to be killed just before I'm gonna make my big hit.
So I can live with the SC shadows because they work every time and the green light on Sam Fisher's shoulder is only there to let the gamer know where he is positioned in total darkness.

Funnily, I though the stealth in Batman Arkham Asylum was done better than Splinter Cell conviction, and that's saying a lot.
But wait, there was stealth in Splinter Cell Double Agent PC/360 version?

arma/flashpoint specop stealth missions are pretty good (though very hard)
penumbra games (though not 'stealth' in the way usually meant.. here you need to hide so you won't get eaten)
silent hunter 3? ;D
also, what was wrong with sc conviction's stealth?
i thought it was fairly consistent - apart from a few forced detections at a few points
and that 'darkness' is so visible to the player
man, we really need a new thief game
i hope they won't screw up it up this time

Your right about Stalker (Really nice with the Complete2009 mod).
I haven't tried Metro yet, is that really a stealth game? I expected it to be a classic shooter with some horror elements.
