Hi, I have the image of Visual Studio 2008 on my Computer and the possibility to obtain Visual Studio 2010 Ultimate via MSDNAA. Now that I have a little bit more time, I would like to do more stuff with XNA. Should I use Visual Studio 2010 instead of 2008?
Would there be any differences between 2010 and 2008 regarding XNA development?

XNA GS 4.0 is still not released (it is coming this month), thus your only option right now is to go with XNA GS 3.1, which only works with VS9. However, I'd suggest waiting a few more days/weeks for XNA GS 4.0 to be released, as there are many significant differences between XNA itself, so you better learn 4.0 anyway.
There is, however a XNA GS 4.0 CTP you can hunt down, if you wish to start learning the new XNA Framework 4.0 with VS10.

What is the difference between XNA 4.0 and 3.1? The only thing that microsoft seems to promote, is the game development for Windows Phone 7?

No no, there are core changes and API changes. I tried upgrading my flight simulator from 3.1 to 4.0 and when I noticed the errors were not simple "swap the parameters" but serious code section replacements, I decided it wasn't worth it for the simulator. I haven't looked into the many changes myself either, because the CTP may not be finalized framework, so I am waiting for the release version to start learning and getting familiar with the changes.
You can see here already starting to appear information:
http://www.google.com/search?q=xna+4.0+changes
But as you haven't touched 3.0/3.1, this should not matter to you, as the new changes are supposed to be more efficient.

BTW, you should change the thread's title to XNA and we can have this thread as XNA learning for people interested in XNA.
