Someone is playing the Star Wars theme on some super synthesizer with pedals and stuff and it sound AMAZING, basically exactly the same as the soundtrack. I can't remember the name of the instrument.
I'd say it is for real. There are instruments like these organs that are really hard to play, but sound really great.
The instrument of my aunt's husband has a really great synthesizer. When you switch to guitar sounds, it just sounds like the real thing. Same with all the other instruments. There has to be a reason why that thing costs more than a car...

I'd have to go for fake, especially on the high toned horns, I can pick out at least 3 overlapping. I'm sure the instrument sounds great and she's probably playing it, but i'm guessing it's multiple sessions overlapped into a mux as the video starts to fall offsync a bit in.
As far as Pirates of the Caribbean goes..this one is my favorite:

(Think the one the girl is playing is an extended version of this, or from an earlier movie)

More or less anything by Hanz Zimmer and you can't go wrong
@Spazmotic: there are also drum-sounds that overlap with cymbal sounds. It is done so, because it is an orchestral patch, so one can actually play an orchestra. A lot of virtual instruments do the same multilayering of sounds. And just because it is out of sync does not mean it is edited. Sometimes youtube fucks videos up on its own.
