Can I, and how to, edit the display for choosing OS? I mean, how can I extend the period of time for choosing between OS? I'm completley new to linux so any help would be appreciated...

You need to edit a text file, /boot/grub/menu.lst as root user.
At the top of this file you will see something like 'timeout 15' change this to your liking.
