the concierto d'aranjuez is originally by spanish composer joaquin rodrigo. Try to get any decent orchestra version of it =) It is three parts (allegro con spirito, adagio and allegro gentile)
Also check out his Fantasia para un gentilhombre and perhaps rapsodia espanola by isaac albeniz and rapsodia sinfonica by joaquin turina which is of comtemporary work
since i m eclectic with all music-styles that are not metal, that is all i can suggest. If anybody comes up with other good spanish epic guitar music i d appreciate it also. I can only think of italo western songs by sergio leone atm
