A phonograph needs to be run through a pre-amp to boost the signal from the stylus(needle) so you'd have to run the phonograph through an audio amp and take the line-out from the amp and go to your soundcard. The "tape-out" line would do the trick.

If you use Sound Forge to do the sampling there are some nice plugins out there that will let you clean up your vinyl by removing pops, clicks and scratches. The one I use is called "Vinyl Restoration."

Usually I run it through the plugin and then normalise the result to compensate for the fact that the mastering levels on many records are quite low. This is good practice for tapes too.
