The Long Dark?
This one is about trying to survive in a cold environment, it's you against wildlife, dwindling resources and extreme cold.

Did you play it? Just got it on sale. Worth starting now or should I wait for more content?
Have not played most of the ones in the list on top besides the Forest, and was quickly disappointed. I hear a lot of people saying negative things about it also.
Other then that I would highly recommend Don't Starve. Really enjoyed that one.
You might want to take a look at Sir, You Are Being Hunted. Can get it really cheap. Worth a try IMO.

I did play it, I think there's definitely some tuning required and while you spawn in a random spot of the map it would be pretty quick to learn them since the map doesn't change.
Also you have to go through food like ridiculously quickly. There is no goal other than just how many days you can survive.
They are working on a story mode but for now it's just sandbox.

Imo The Long Dark sucks.. it's just too fucking boring and meaningless, like so many other open world survival games. graphics are awful too.. can't even climb (a must for proper exploration). the world itself is dull and badly designed, it's not like you're going to stumble upon something more exciting than a broken down car or yet another copy/pasted cabin.. it's crap.
Imo, Skyrim heavily modded is still the best survival game, tons of content, decent RPG system, has quests, graphics that can be fine tuned into infinity, you can swim and dive, climb (a must in open world games imo, how fun is exploration otherwise?). There are mods that takes for example cold and hunger into account. Compare this to a game like The Long Dark (yes it's very unfair, so?) and have a laugh.
If you don't like the fantasy setting there are similar mods for FO3 / NV.
I can recommend This War of Mine and Don't Starve though.. if you are ok with 2D and Roguelike. Both are very unique.

Probably too old for what you're looking for, but Survival Kids on a GBC emulator is a good one and has a lot of features from modern games, like crafting tools, gathering supplies and getting sick if you eat rotten food. It's basically a 15 year earlier version of Don't Starve.

I was looking for such a game as well but the major problems with those titles are:
*copy pasted houses cars etc etc
*ifyou dont have atleast a coop partner you are screwed
This sale i bought h1z1 but even if its oay iam not too happy about it BUT
after that I bought arma 3 which has tons of mods and survival kinda mods like Breaking Point, Epoch ... or some refreshing stuff like Altis Life
So in the end i would recommend you Arma III (beside the mods you ll have the normal arma 3 game on top)

I played it and liked, tough tp survive but with good mechanics but was in beta still, dont know if better or now, if downgraded

ARK works rather well in singelplayer...however, its badly optimized.
shitloads of new stuff in my pc. Cant keep track of it all.

ARK is no more teaming up than any other multiplayer survival game, but it has better progression than most. Worth a try in any case, it seems fine to me playing solo (my friends always flake out). There's plenty of PVE servers incase you don't like fake survival (i.e rust, which is more deathmatch than survival). It's the best of the early access survival MP games by a long shot I suspect.
I'll give Dying light a mention because it felt like a survival game at times, so long as you can handle zombies again. More of an action game naturally.
Someone already mentioned NEO Scavenger- that's one of the better and harsher ones. To name a flaw it didn't seem as long as it should be. You'll still get a ton of hours out of it if you enjoy survival.
Others already mentioned Don't starve and Sir, you are being hunted. Both quite good, particularly Don't starve.
If you haven't played Alien Isolation you should do so, it's not open world but it's not linear, a great survival horror. It's really cheap at the moment.
Non-steam/old freeshit:
Darklands. It might not fulfill every survival element but I'd say it's got most of them and it's a really awesome game to get stuck into.

On the non-graphical side:
Cataclysm: DDA is top tier. Has every survival element you can think of. Zombies, vehicles, guns, full city scapes, construction, slightly sci-fi. Good times if you want to survive against a hostile world.
Unreal world is probably the most legitimate survival game of any of these. http://www.unrealworld.fi/
Also probably the hardest to get into.
The problem with most of the modern survival games is that they don't seem to have a fucking clue about survival. I'm probably forgetting a billion titles but these are the ones that came to mind immediately.

Ended up getting a refund for The Long Dark. It was an impulse buy and after playing it for about an hour I was not impressed at all. Maybe it will get better with time, but right now I could not recommended it.
One more game that came to mind that I can recommend is Unturned. It's F2P, and I had quite a bit of fun with it.
