Nah, they didn't rename him, but they decided to focus the game on some other deity. Cthulhu exists in the game's universe as well, as you can hear "Cthulhu fhtagn", I believe, and there's another reference as well that I won't spoil.
But the game might as well had been called Call of Leviathan, and if the player doesn't know who Cthulhu is prior to playing it, they will finish the game having an understanding of who Leviathan is, but they will be utterly confused who that Cthulhu dude from the title is supposed to be.
TWIN PEAKS is "something of a miracle."

The cult is under Cthulhu's influence, but the player is guided by Leviathan. However:

I summoned Cthulhu and pretty much brought the end of the world. After his arrival from the depths of the ocean, the cult started fighting, Pierce was killing people left and right. This ending was brilliant.

Leviathan is a very weird choice to use in a game called Call of Cthulhu. Leviathan originally came from the Torah/Judaism. In more modern times it's basically any monstrous sea creature, similar to Behemoth.
Grammatically it's the same. You'd normally say "it's a leviathan" or if it's a particular one; "it's the leviathan".
With Cthulhu you simply say "It's Cthulhu". Not THE Cthulhu or A Cthulhu.
